How to make Jamaica Curry Chicken

I love Curry chicken it is one of my favourite Jamaica dishes. There are a few things you will need to get from the store you will need 5 lbs of leg quarters (or enough for you and company), 1 yellow onion, 1 yellow skin potato, 2 tomato’s, salt, ( I prefer sea salt) black pepper, garlic power, curry powder ( you can get hot or mild curry powder, I prefer the hot) vegetable oil. Wash and clean the chicken and get rid of excess fat then cut the chicken into cubs not too big (do not remove the meat from the bone) add 1/3 cup of vegetable oil to the pot and pre heat your pot on medium low (use a deep pot) add a dash of salt, cut up and add your 2 tomato’s add ½ teaspoon of garlic power, and 5 spoons ( No teaspoons) of curry power (if the curry is light you can always add more to get a darker look) add a dash of black pepper ( if you get the hot curry power you can skip the black pepper) Cut and add the yellow onion, peel the potato and add your potato. Mix the seasons with the chicken and place in the pre heated pot, then add 1 cup of water, mix, and let it cook for 35 min oh medium high or until the chicken is done, stir the chicken and you can always add more water for the gravy if needed but not too much. White rice can be eaten with the curry chicken and a bowl of salad to go all out you can fry 2 plantains and play some Bob Marley. Enjoy!
